Once again a new year has arrived and with it the opportunity to expand your culinary boundaries by participating in some of the most unique cooking classes available in north Texas. Many have returned to take several classes a year and they in turn bring their friends and family members making it a special tradition. Chef Eva's reputation has grown by word of mouth from satisfied class participants and with the publication of each new article about our family farm. Southern Living designated it as one of "America's Secret Farm Hideaways".

The Dallas Morning News said "In the course of the classes, amateur cooks take turns exclaiming at the revelations chef Eva casually drops. Not only do you push back from the Greer's table with appetite and taste buds sated, but you also go back home to your own kitchen with refreshed pleasure in the process".

Texas Co-Op Power magazine designated our farm and Chef Eva's cooking classes as a place for a learning vacation. "During the whirlwind three-hour class in the spacious, well-lit kitchen, we watched Eva prepare beef roast, lamb chops, pork loin, butternut squash, potatoes, mint sauce, gravy, roasted fruit and toasted pound cake. She handled this complex dance with practical ease, even managing to involve us in pureeing, seasoning, turning, beating and mixing. Delectable smells permeated the kitchen, and we dug appreciatively into the finished dishes. Chef Eva made it fun and had us convinced that we could cook like this ourselves".

Many have scheduled private classes to bring together family or friends. Some rent all the cabins and make it a weekend event. The menu possibilities for these classes are very flexible.

  • Culinary Expectations
    Building off the success of last year's scheduled and on going private cooking classes, Chef Eva has great expectations for the 2019-2020 culinary season at the Greer Farm. She is focused on private classes, and culinary retreats. Her classes offer a broad spectrum of culinary experiences that meet almost every food desire. Each menu prepared in consultation with you will be carefully balanced to include parings of dishes that focus on the class theme.
  • Cooking with Chef Eva
    Chef Eva opens her chef's kitchen to share her culinary expertise with those that want to expand their culinary talents. Situated on a real working farm it is not difficult to get caught up in the "farm to table" spirit that prevails on our family farm. Each class highlights the fun and magic of cooking. If you just want to learn the basics or if you want to go fancy and surprise a special person in your life, cooking classes at the Greer Farm are a culinary event you will never forget. Every class is a hands-on experience. There are no overhead mirrors or video screens. Our classes include laughter, questions, conversation, and eating. We want to show you how great food begins and feel the passion and commitment we have to food, including that grown on our family farm or by other artisan producers. We offer private classes to groups and individuals by prior arrangement.
  • Private Classes
    Chef Eva offers private cooking classes. These cross the spectrum of different groups. Some are families that wanted a fun time to bond, others are friends wanting a time away from their normal life to unwind and their were corporate groups that needed a team building session, but were tired of all the boring, bridge building, corporate bonding retreats that too many companies thrust their management and employees into. Consider something different: a retreat that includes a farm stay, relax in log cabins and take a private cooking class. The Greer farm is the perfect environment to bring a group together, rent log cabins and spend time cooking, eating and renewing friendships. There is nothing that makes people bond quicker than good food. Private classes are $720 minimum for a group up to eight and $90 for each additional person over six participants. We have a wide selection of sample menus for you to consider or a special menu can be designed for your group.
  • Who is Chef Eva?
    Chef Eva was born and raised in Belize, a small country on the Caribbean coast of Central America. She is a graduate of Loyola University and The Houston Art Institute (Culinary Arts). For a number of years, she was a consultant to Pilgrim's Pride Corporation developing recipes, including their newsletter. Her recipes have appeared in advertisements in Good Housekeeping and Southern Living. Chef Eva's private dining and catering services are renowned. For more than a decade she has been teaching cooking classes at the family farm, for a local community college, and other venues. Chef Eva's Latin American upbringing, European parental influences, and two decades of world travel with her husband bring a unique experience to the kitchen that is not easily duplicated.   • Culinary Retreats
    New to us is a weekend culinary retreat at the farm. In addition to three cooking classes, there will be ample time to roam the farm, walk the trails help collect eggs and feed animals. The farm has its own herb garden and we will utilize fresh vegetables from our farm or local farms where possible and our own natural eggs, lamb, chicken, beef and pork.

    Chef Eva will seek input for the class menus in advance of the retreat.The weekend will start with snacks and complimentary wine on your arrival Friday late afternoon or evening. Saturday morning (after farm chores for those that want to participate) will be a continental breakfast. You can participate in preparing the breakfast at your option. All of the classes are hands on and the participants will be divided into small teams to work on different menu items. There will also be demonstration of culinary techniques. The morning class will focus on using fresh vegetables and fruit for a menu that is lighter and healthy. There will be a break after lunch. The late afternoon class will be hearty and feature meat dishes, seasonal vegetables, a unique dessert and complementary wine. Sunday morning the class will focus on a farm house breakfast with a twist. The Saturday classes will be 3-4 hours depending on the complexity of the menu.

    Minimum participation for the retreat will be eight persons (cabin has queen bed and queen sofa bed) sharing the four log cabins. The loft is available for other participants (queen bed and twin in downstairs bedroom, queen bed in loft, and queen sofa bed if needed) Cost is $450 per person (assuming two persons in a cabin or loft). Additional participants in the same cabin or loft is $350. State taxes apply only to the cabin rental and not the classes. Gratuity optional. Terms & Conditions For Scheduled Cooking Classes

Scheduled Class Reservations (Please read our cancellation policy before making a reservation) Classes are by reservation only and must be paid for at the time the reservation is made. Call 903-645-3232 for availability and to make a reservation using a credit card. Space is filled on a first come, first served basis. Participants should be 14 or older. If your preferred class is full, we will place you on a waiting list. Your credit card will be charged at the time you make your reservation.

Cancellation Policy
Due to the financial impact of cancellations at the last minute, our cancellation policy is strictly followed. There are no exceptions regardless of the circumstances or nature of an emergency situation. If you cancel a reservation 21 days prior to a class, your class fee will be refunded less 50% as a cancellation charge. To lose no value, you may transfer your class reservation to another person. If cancellation is within 20 days of the class date, you forfeit the entire class fee. A substitution is allowed to avoid this. All refunds are by check.

Class Cancellation
We reserve the right to cancel any class at any time. Classes may be cancelled due to insufficient enrollment, illness of the instructor or inclement weather. Date of a class may change for unforeseen reasons and advance notice will be sent to you. In such instances, you can receive a full refund or you may choose to use the class fee paid as a credit toward another class. Recipes may be changed due to unavailability of ingredients.

Staying on the Farm
If you wish to combine a Farm to Fork Cooking Class and a weekend getaway, we offer accommodation in a lakeside cabin. Book early to avoid disappointment.
